Born and raised in San Juan, Puerto Rico, Swani has held many successful positions in the restaurant industry, from catering to management. She has worked for many well-known businesses such as Chart House Seafood Restaurant and Hard Rock Café and has successfully owned and operated four dining concepts. The inspiration for Madrid Spanish Taverna was organic due to Swani’s Spanish family heritage, influence, and her passion for tapas-style food and authentic Spanish service. Swani’s ability to combine her skills in decoration, ambiance and day-to-day execution with her personal attention to each and every guest is what makes her stand out in the restaurant industry and Madrid Spanish Taverna.
